1 pound ground turkey
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 medium zucchini, grated
1 (15 ounce) can diced tomatoes, undrained
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheddar cheese
Instructions
Preheat your oven to 375ยฐF (190ยฐC).
Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
Add onion and garlic to the skillet and cook until softened, about 5 minutes.
Stir in grated zucchini, diced tomatoes (with their juice), Italian seasoning, salt, and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally.
Transfer the mixture to a 9×13 inch baking dish.
Sprinkle cheddar cheese evenly over the top.
Bake for 20-25 minutes, or until the cheese is melted and bubbly.
Let stand for 5 minutes before serving.
Notes
You can add other vegetables like bell peppers or mushrooms.
For a spicier casserole, add a pinch of red pepper flakes.
