Ground Turkey Zucchini Casserole

A simple and healthy casserole made with ground turkey and zucchini.

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium zucchini, grated
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  3. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in grated zucchini, diced tomatoes (with their juice), Italian seasoning, salt, and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  5. Transfer the mixture to a 9×13 inch baking dish.
  6. Sprinkle cheddar cheese evenly over the top.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Let stand for 5 minutes before serving.

Notes

  • You can add other vegetables like bell peppers or mushrooms.
  • For a spicier casserole, add a pinch of red pepper flakes.
