Halloween Breakfast Quesadilla

A fun and festive breakfast quesadilla perfect for Halloween morning.

Ingredients

  • 2 large flour tortillas
  • 1 tablespoon butter
  • 2 large eggs
  • 2 tablespoons milk
  • Salt and pepper to taste
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup cooked bacon or sausage, crumbled
  • 1/4 cup black beans, rinsed and drained
  • 1/4 cup salsa
  • Optional: Sour cream, guacamole for serving

Instructions

  1. Cut out shapes from the tortillas using Halloween-themed cookie cutters.
  2. Heat butter in a non-stick skillet over medium heat.
  3. Whisk eggs, milk, salt, and pepper in a bowl.
  4. Pour egg mixture into the skillet and cook, stirring occasionally, until set.
  5. Place one whole tortilla in the skillet. Sprinkle half of the cheese, cooked meat, and black beans over it.
  6. Top with scrambled eggs and the remaining cheese.
  7. Place a cut-out tortilla shape on top.
  8. Cook for 2-3 minutes per side, until golden brown and cheese is melted.
  9. Repeat with the second quesadilla.
  10. Cut into wedges and serve with salsa and optional toppings.

Notes

  • You can use any cookie cutters you have on hand.
  • Feel free to add other breakfast ingredients like diced peppers or onions.
  • Make sure the skillet is not too hot to prevent burning the tortillas.
