Healthy Banana Muffins

  • 2 ripe bananas, mashed
  • 1/3 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1/4 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch of salt
  • Optional: 1/2 cup chopped nuts or chocolate chips

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease or line a 12-cup muffin tin.
  2. In a large bowl, mash the ripe bananas.
  3. Add the applesauce, honey or maple syrup, milk, and vanilla extract to the mashed bananas. Stir until well combined.
  4. In a separate bowl, whisk together the whole wheat flour, baking soda, cinnamon, nutmeg, and salt.
  5. Add the dry ingredients to the wet ingredients. Stir until just combined. Do not overmix.
  6. If using, gently fold in the chopped nuts or chocolate chips.
  7. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Ensure your bananas are very ripe for the best flavor and sweetness.
  • You can substitute half of the whole wheat flour with all-purpose flour for a lighter texture.
  • Store cooled muffins in an airtight container at room temperature for up to 3 days.
