  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/4 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon maple syrup (optional)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking sheet with parchment paper.
  2. In a medium bowl, mash the bananas until smooth.
  3. Add the rolled oats, flour, baking powder, cinnamon, salt, and maple syrup (if using) to the mashed bananas.
  4. Mix all ingredients until just combined. Do not overmix.
  5. Drop rounded tablespoons of the mixture onto the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly with the back of a spoon.
  6. Bake for 12 to 15 minutes, or until the edges are lightly golden brown.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a sweeter cookie, add 1/4 cup of raisins or chocolate chips to the batter.
  • You can substitute almond flour for the whole wheat flour for a gluten-free option (check that your oats are certified gluten-free).
  • Store cooled cookies in an airtight container at room temperature for up to 3 days.
