Healthy Chicken Taco Bowls

A simple and healthy take on taco bowls with seasoned chicken and fresh toppings.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • 1 cup cooked quinoa
  • 1 cup chopped romaine lettuce
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/4 cup salsa
  • 2 tbsp plain Greek yogurt
  • 1/4 cup chopped cilantro

Instructions

  1. Cut chicken breasts into bite-sized pieces.
  2. In a bowl, toss chicken with olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Heat a skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes.
  4. Assemble bowls by layering quinoa, lettuce, black beans, corn, and cooked chicken.
  5. Top with salsa and Greek yogurt.
  6. Garnish with cilantro.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the chicken seasoning.
  • You can substitute brown rice for quinoa.
  • Other topping ideas include avocado, pico de gallo, or shredded cheese.
