Healthy Chocolate Chickpea Truffles

Easy no-bake truffles made with chickpeas, cocoa powder, and natural sweeteners.

Ingredients

  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: shredded coconut, chopped nuts, or cocoa powder for rolling

Instructions

  1. Pat the chickpeas very dry with paper towels.
  2. Add chickpeas, cocoa powder, maple syrup, almond butter, vanilla extract, and salt to a food processor.
  3. Process until the mixture is smooth and forms a dough-like consistency.
  4. Roll the mixture into small balls, about 1 inch in diameter.
  5. If desired, roll the truffles in shredded coconut, chopped nuts, or cocoa powder.
  6. Place the truffles on a baking sheet lined with parchment paper.
  7. Refrigerate for at least 30 minutes to firm up before serving.

Notes

  • Ensure chickpeas are very dry to prevent a mushy texture.
  • Adjust maple syrup to your sweetness preference.
  • Store truffles in an airtight container in the refrigerator for up to a week.
