Healthy Smashed Carrots

Simple and healthy smashed carrots ready in 15 minutes.

Ingredients

Scale
  • 1 lb carrots
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

  1. Peel and chop carrots into uniform pieces.
  2. Boil carrots until tender, about 10-12 minutes.
  3. Drain carrots well.
  4. Place carrots in a bowl. Add olive oil, salt, and pepper.
  5. Mash carrots with a fork or potato masher until mostly broken down.
  6. Serve immediately.

Notes

  • For extra flavor, add a pinch of garlic powder.
  • You can substitute butter for olive oil.
