Hearty Bok Choy Chicken Soup

A simple and nourishing chicken soup with bok choy.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 6 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups bok choy, chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
  3. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  4. Return chicken to the pot. Add chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Stir in bok choy and cook until tender, about 5 minutes.
  6. Garnish with fresh parsley before serving.

Notes

  • For a richer flavor, you can use chicken breast instead of thighs.
  • Add other vegetables like peas or corn for extra nutrition.
