  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn, drained
  • 1/4 cup diced red onion
  • 1/4 cup diced bell pepper (any color)
  • 1/4 cup chopped cilantro
  • 1/4 cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken, black beans, corn, red onion, bell pepper, and cilantro.
  2. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, lime juice, chili powder, and cumin.
  3. Pour the dressing over the chicken and vegetable mixture.
  4. Stir gently until all ingredients are well combined.
  5. Season with salt and pepper to your preference.
  6. Serve immediately or chill for later.
