Holiday Toffee Crunch

A simple and delicious toffee crunch candy perfect for holiday gifting or snacking.

Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 2 cups granulated sugar
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts (pecans or walnuts), optional
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable shortening, optional

Instructions

  1. Line a baking sheet with parchment paper or aluminum foil.
  2. In a heavy-bottomed saucepan, melt the butter over medium heat.
  3. Add the granulated sugar and water. Stir until the sugar is dissolved.
  4. Bring the mixture to a boil, stirring occasionally.
  5. Cook without stirring until the mixture reaches 300°F (150°C) on a candy thermometer, or until it turns a deep amber color. This will take about 10-15 minutes.
  6. Remove from heat and stir in the vanilla extract. If using nuts, stir them in now.
  7. Pour the toffee mixture onto the prepared baking sheet and spread it evenly.
  8. Immediately sprinkle the chocolate chips over the hot toffee. Let them sit for a minute to soften.
  9. If using shortening, stir it into the melted chocolate chips until smooth. Spread the melted chocolate evenly over the toffee.
  10. Let the toffee cool completely until the chocolate is firm.
  11. Break the toffee into pieces.

Notes

  • For a smoother chocolate topping, you can melt the chocolate chips with the shortening in a double boiler or microwave in short intervals.
  • Store the toffee in an airtight container at room temperature.
