This Honey Hot Chicken Salad is the perfect balance of sweet and spicy — featuring juicy grilled chicken glazed in homemade hot honey, served over a bed of fresh mixed greens, crisp vegetables, and optional creamy toppings. It’s clean, satisfying, and loaded with flavor in every bite.

For the Chicken:

  • 1 lb boneless skinless chicken thighs (or breasts)

  • 1 tbsp olive oil

  • ½ tsp smoked paprika

  • ½ tsp garlic powder

  • Salt & pepper to taste

For the Salad Base:

  • 4 cups mixed greens (romaine, arugula, or spinach)

  • ½ cup cherry tomatoes, halved

  • ¼ cup red onion, thinly sliced

  • ¼ cup shredded carrots

  • ½ avocado, sliced (optional)

  • 2 tbsp pumpkin seeds or toasted almonds (optional crunch)

For the Hot Honey Glaze:

  • ½ cup raw honey

  • 1 tsp red chili flakes

  • ½ tsp apple cider vinegar

Optional Dressing (Hot Honey Vinaigrette):

  • 2 tbsp hot honey (from glaze above)

  • 1 tbsp Dijon mustard

  • 1 tbsp apple cider vinegar

  • 1 tbsp olive oil

  • Pinch of sea salt

Instructions

  • Season the Chicken: Rub chicken thighs with olive oil, smoked paprika, garlic powder, salt, and pepper.

  • Cook the Chicken: Grill or pan-sear over medium-high heat for 6–7 minutes per side until cooked through. Rest before slicing.

  • Make the Hot Honey: In a saucepan, warm honey, chili flakes, and vinegar over low heat for 3–4 minutes. Do not boil.

  • Assemble the Salad: Layer greens, tomatoes, onions, carrots, and avocado in a bowl.

  • Top and Drizzle: Add sliced chicken and drizzle hot honey or prepared vinaigrette. Sprinkle seeds or nuts if using.
