1 lb boneless skinless chicken thighs (or breasts)
1 tbsp olive oil
½ tsp smoked paprika
½ tsp garlic powder
Salt & pepper to taste
4 cups mixed greens (romaine, arugula, or spinach)
½ cup cherry tomatoes, halved
¼ cup red onion, thinly sliced
¼ cup shredded carrots
½ avocado, sliced (optional)
2 tbsp pumpkin seeds or toasted almonds (optional crunch)
½ cup raw honey
1 tsp red chili flakes
½ tsp apple cider vinegar
2 tbsp hot honey (from glaze above)
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
1 tbsp olive oil
