Ina Garten’s Chicken Casserole

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley
  • 1 1/2 cups egg noodles, cooked
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 8-10 minutes.
  3. Season with salt and pepper. Stir in flour and cook for 1 minute.
  4. Gradually whisk in chicken broth and heavy cream. Bring to a simmer, stirring constantly, until thickened.
  5. Stir in thyme, rosemary, shredded chicken, and frozen peas. Cook for 5 minutes, or until heated through.
  6. Stir in cooked egg noodles and fresh parsley.
  7. Sprinkle Parmesan cheese over the top.
  8. Bake for 20-25 minutes, or until bubbly and lightly browned.

Notes

  • You can use leftover cooked chicken for this recipe.
  • For a richer flavor, use half-and-half instead of heavy cream.
  • Garnish with extra fresh parsley before serving.
