Lasagna Roll Ups with Saucy Comfort

A simple and delicious twist on traditional lasagna. Tender lasagna noodles filled with creamy ricotta and mozzarella, rolled, covered in marinara sauce, and baked with a cheesy topping. Perfect for a comforting family dinner or meal prep.

  • 9 lasagna noodles
  • 1 ½ cups ricotta cheese
  • 2 cups shredded mozzarella cheese, divided
  • 2 cups marinara sauce, divided
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil, optional for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Boil a large pot of water.
  2. Cook lasagna noodles in boiling water until al dente (about 8 minutes). Drain and lay flat.
  3. In a bowl, combine ricotta cheese, 1 cup mozzarella, Parmesan cheese, salt, and pepper. Mix well.
  4. Spread about 2 tablespoons of cheese filling over each noodle. Roll each noodle tightly.
  5. Spread half the marinara sauce in a baking dish. Place roll-ups seam-side down. Spoon remaining sauce over roll-ups and sprinkle with remaining mozzarella.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake uncovered for 5 more minutes until cheese is browned.
  7. Let cool slightly, garnish with basil if desired, and serve hot.

Notes

  • Prepare roll-ups ahead and refrigerate before baking; add extra baking time if baking from the fridge.
  • Use no-boil noodles for a shortcut, but increase baking time and ensure enough sauce.
  • Add cooked spinach, mushrooms, or ground meat to the cheese filling for variety.
  • Layer parchment paper between cooked noodles if stacking to prevent sticking.
