Lasagna Soup with Cheesy Topping

A quick and easy lasagna soup recipe topped with a creamy cheese mixture, perfect for a family-friendly dinner.

Ingredients

  • 2 pounds ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian Seasoning
  • Salt and Pepper to taste
  • 1 jar marinara sauce
  • 4 cups beef broth
  • 2 cups dried pasta
  • 1/2 cup ricotta cheese
  • 1/2 cup cottage cheese
  • 1/2 cup parmesan cheese
  • 1/2 cup mozzarella cheese

Instructions

  1. In a large pot, combine ground beef and chopped onion. Cook until beef is browned. Drain grease.
  2. Add minced garlic, Italian seasoning, salt, pepper, marinara sauce, and beef broth to the pot. Stir well and bring to a simmer.
  3. Stir in dried pasta. Reduce heat and simmer for 20 minutes, or until pasta is cooked through.
  4. While the soup simmers, prepare the cheese topping. In a separate bowl, mix ricotta cheese, cottage cheese, parmesan cheese, and mozzarella cheese until well combined.
  5. Serve the soup hot, topped with a scoop of the cheese mixture and additional parmesan cheese.

Notes

  • You can use any type of pasta you have on hand. Lasagna noodles broken into pieces work well.
  • Add extra parmesan cheese to the top for more flavor.
