1 pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
1/2 cup water
2 tablespoons chopped fresh parsley
1 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon black pepper
12 thin slices zucchini
1 (15 ounce) container ricotta cheese
1 egg
1/4 cup grated Parmesan cheese
1 pound shredded mozzarella cheese
Instructions
Preheat oven to 375 degrees F (190 degrees C).
In a large skillet, brown the ground beef. Drain off any excess fat.
Add the chopped onion and minced garlic to the skillet. Cook until the onion is softened, about 5 minutes.
Stir in the crushed tomatoes, tomato paste, and water. Add parsley, basil, salt, and pepper. Bring to a simmer, then reduce heat and cook for 15 minutes, stirring occasionally.
In a medium bowl, mix together the ricotta cheese, egg, and Parmesan cheese.
Spread a thin layer of the meat sauce in the bottom of a 9×13 inch baking dish.
Arrange a layer of zucchini slices over the sauce.
Spread half of the ricotta cheese mixture over the zucchini.
Sprinkle one-third of the mozzarella cheese over the ricotta mixture.
Repeat the layers: meat sauce, zucchini, remaining ricotta mixture, and another one-third of the mozzarella cheese.
Top with the remaining meat sauce and the remaining mozzarella cheese.
Cover with foil and bake for 25 minutes.
Remove the foil and bake for an additional 20 minutes, or until the cheese is melted and bubbly.
Let stand for 10 minutes before serving.
Notes
For best results, use fresh zucchini.
You can substitute ground turkey or Italian sausage for the ground beef.
If you don’t have fresh parsley, you can use 2 teaspoons of dried parsley.
