Lemon Chicken Romano

A simple and flavorful chicken dish with lemon and Romano cheese.

  • 2 boneless, skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 clove garlic, minced
  • 1/4 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons grated Romano cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Pound chicken breasts to 1/2-inch thickness.
  2. In a shallow dish, combine flour, salt, and pepper. Dredge chicken in flour mixture.
  3. Heat olive oil and butter in a large skillet over medium-high heat.
  4. Add chicken to skillet and cook for 3-4 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  5. Add garlic to skillet and cook for 30 seconds until fragrant.
  6. Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet.
  7. Bring to a simmer and cook for 2 minutes.
  8. Stir in Romano cheese until melted.
  9. Return chicken to skillet and spoon sauce over it.
  10. Garnish with parsley before serving.

Notes

  • Serve with pasta or rice.
  • For extra lemon flavor, add lemon zest to the sauce.
