Lemon Chicken Soup

Lemon Chicken Soup - Tasty

A bright and comforting chicken soup with a zesty lemon flavor.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup chopped yellow onion
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 6 cups chicken broth
  • 1/2 cup orzo pasta
  • 1/4 cup fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chicken pieces and cook until lightly browned on all sides. Remove chicken from the pot and set aside.
  3. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Add orzo pasta and return the chicken to the pot. Reduce heat and simmer until the pasta is cooked through, about 8-10 minutes.
  6. Stir in lemon juice and parsley.
  7. Season with salt and pepper to taste.

Notes

  • For a richer flavor, you can use chicken thighs instead of breasts.
  • Add a pinch of red pepper flakes for a touch of heat.
  • Garnish with extra parsley or lemon slices before serving.
