Easy chickpea patties with lemon and herbs, served with a simple yogurt sauce.

Ingredients

  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/4 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • For the Yogurt Sauce:
  • 1/2 cup plain yogurt
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Mash the chickpeas in a medium bowl with a fork until mostly mashed but still slightly chunky.
  2. Add breadcrumbs, onion, parsley, lemon juice, lemon zest, garlic powder, salt, and pepper to the bowl. Mix well.
  3. Form the mixture into 4 patties.
  4. Heat olive oil in a skillet over medium heat.
  5. Cook the patties for 4-5 minutes per side, until golden brown and heated through.
  6. While the patties cook, prepare the yogurt sauce by combining yogurt, mint, and lemon juice in a small bowl. Season with salt and pepper.
  7. Serve the patties with the yogurt sauce.

Notes

  • You can add other herbs like cilantro or dill to the patties.
  • For a gluten-free option, use gluten-free breadcrumbs.
