Lemon Chickpea Patties with Yogurt

Easy to make chickpea patties with lemon and herbs, served with a simple yogurt sauce.

Ingredients

  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1/4 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • For the Yogurt Sauce:
  • 1/2 cup plain yogurt
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon lemon juice

Instructions

  1. In a medium bowl, mash the chickpeas with a fork until mostly broken down.
  2. Add the breadcrumbs, onion, parsley, lemon juice, lemon zest, garlic powder, salt, and pepper. Mix well to combine.
  3. Form the mixture into 4 equal patties.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Cook the patties for 4-5 minutes per side, until golden brown and heated through.
  6. While the patties are cooking, prepare the yogurt sauce by mixing the yogurt, mint, and lemon juice in a small bowl.
  7. Serve the patties with the yogurt sauce.

Notes

  • You can add other herbs like dill or cilantro to the patties.
  • For a gluten-free option, use gluten-free breadcrumbs.
  • These patties can be baked instead of fried. Place them on a baking sheet and bake at 375ยฐF (190ยฐC) for 20-25 minutes, flipping halfway through.
