1 lb boneless, skinless chicken breasts
2 tbsp fresh lemon juice
2 tsp lemon zest
1 tbsp olive oil
2 cloves garlic, minced
1 tbsp fresh dill (or 1 tsp dried dill)
Salt and black pepper, to taste
2 cups cooked brown rice or quinoa
1 cup cherry tomatoes, halved
1 cup cucumber, sliced
2 cups baby spinach or mixed greens
(Optional): 1/4 cup crumbled feta, 1 tbsp plain Greek yogurt, or lemon-tahini drizzle for topping
Marinate the Chicken
In a bowl, whisk lemon juice, lemon zest, olive oil, garlic, dill, salt, and pepper. Add chicken and coat evenly. Cover and marinate for at least 30 minutes or overnight in the fridge.
