Lemon Dilly Chicken Rice Soup - Tasty

A bright and flavorful chicken and rice soup with lemon and dill.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup chopped yellow onion
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 6 cups chicken broth
  • 1 cup cooked white rice
  • 1/4 cup chopped fresh dill
  • 2 tablespoons fresh lemon juice
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides. Remove chicken from the pot and set aside.
  3. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Return chicken to the pot. Reduce heat and simmer for 10 minutes, or until chicken is cooked through.
  6. Stir in cooked rice, fresh dill, and lemon juice.
  7. Season with salt and pepper to taste.
  8. Serve hot.

Notes

  • For a richer flavor, you can use chicken thighs instead of breasts.
  • Add a bay leaf while simmering for extra depth of flavor.
  • Garnish with extra fresh dill and a lemon wedge before serving.
