Lemon Herb Chicken Skillet

A quick and flavorful chicken dish cooked in one skillet with fresh herbs and lemon.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lemon, juiced
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh chives

Instructions

  1. In a bowl, toss chicken pieces with olive oil, oregano, thyme, garlic powder, salt, and pepper.
  2. Heat a large skillet over medium-high heat.
  3. Add chicken to the skillet in a single layer. Cook for 5-7 minutes per side, until browned and cooked through.
  4. Squeeze lemon juice over the chicken.
  5. Stir in fresh parsley and chives.
  6. Serve immediately.

Notes

  • For extra flavor, you can add 1/4 cup of chicken broth to the skillet before adding the lemon juice and herbs.
  • Serve with rice, pasta, or a side salad.
