Lemon Pepper Chicken Thighs (Quick)

Prepare zesty, flavorful lemon pepper chicken thighs quickly using a simple skillet method. This recipe is great for a fast weeknight dinner.

  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 2 teaspoons fresh lemon zest
  • 4 bone in skin on chicken thighs (about 1.5 pounds)
  • Homemade lemon pepper seasoning
  • 1 tablespoon olive oil

Instructions

  1. Trim excess skin off chicken thighs and pat them dry with a paper towel.
  2. Mix together your homemade lemon pepper seasoning ingredients.
  3. Cover both sides of the chicken thighs generously with the seasoning mix.
  4. Add olive oil to a skillet and heat it until hot, but not smoking.
  5. Place the chicken thighs skin side down first. Sear that side for 3 minutes.
  6. Flip the chicken to the side without skin. Cover the skillet.
  7. Continue cooking the chicken, covered, for about 10 minutes. Check the internal temperature near the bone with a meat thermometer. Cook until the thermometer reads 165 degrees.

Notes

  • For the best sear, make sure the chicken skin is completely dry before placing it in the hot oil.
  • If you do not have bone-in, skin-on thighs, you can use boneless, skinless thighs, but reduce the covered cooking time to about 6-8 minutes.
