Low-Carb Oven Dish

A simple and satisfying low-carbohydrate meal baked in the oven.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can diced tomatoes, undrained
  • 1 (10 oz) can diced tomatoes and green chilies, undrained
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  3. Add the chopped onion and minced garlic to the skillet. Cook until the onion is softened, about 5 minutes.
  4. Stir in the diced tomatoes, diced tomatoes and green chilies, chili powder, and cumin. Bring to a simmer and cook for 5 minutes.
  5. In a separate bowl, mix together the shredded cheddar cheese, sour cream, and mayonnaise.
  6. Spread the meat mixture evenly in a baking dish.
  7. Top the meat mixture with the cheese mixture.
  8. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Season with salt and pepper before serving.

Notes

  • You can add other low-carb vegetables like bell peppers or zucchini.
  • For a spicier dish, add a pinch of cayenne pepper.
