Low Sugar Oatmeal Cookies

Ingredients

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/4 cup unsweetened applesauce
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. In a medium bowl, combine rolled oats, whole wheat flour, baking soda, and salt.
  3. In a separate bowl, whisk together applesauce, melted coconut oil, maple syrup, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  6. Flatten each cookie slightly with the back of a spoon.
  7. Bake for 10-12 minutes, or until the edges are golden brown.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chewier cookie, bake for a shorter time.
  • Add sugar-free chocolate chips or nuts for extra flavor.
