Mango Teriyaki Salmon

A quick and flavorful salmon dish with a sweet and savory mango teriyaki glaze.

Ingredients

  • 1.5 lbs salmon fillet
  • 1 cup mango chunks, fresh or frozen
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 clove garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp cornstarch, mixed with 2 tbsp water
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Optional: Sesame seeds and chopped green onions for garnish

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. Pat the salmon dry and season with salt and pepper.
  3. In a blender, combine mango chunks, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Blend until smooth.
  4. Pour the mango teriyaki sauce into a saucepan. Bring to a simmer over medium heat.
  5. Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
  6. Place the salmon on a baking sheet. Brush generously with the mango teriyaki sauce.
  7. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Garnish with sesame seeds and green onions if desired.

Notes

  • For a spicier glaze, add a pinch of red pepper flakes to the sauce.
  • Serve with steamed rice and your favorite vegetables.
