Marry Me Chicken

A creamy, flavorful chicken dish perfect for a special occasion.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cut chicken breasts into bite-sized pieces. Season with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
  4. Add onion to the skillet and cook until softened, about 5 minutes.
  5. Add garlic and cook for 1 minute more until fragrant.
  6. Stir in sun-dried tomatoes, heavy cream, chicken broth, Parmesan cheese, basil, and oregano.
  7. Bring to a simmer and cook for 5-7 minutes, or until sauce has thickened.
  8. Return chicken to the skillet and stir to coat.
  9. Season with salt and pepper to taste.
  10. Garnish with fresh parsley before serving.

Notes

  • Serve with pasta, rice, or crusty bread.
  • For a spicier kick, add red pepper flakes with the garlic.
