Ingredients

  • 2 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped chives
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 1/2 cup breadcrumbs
  • Vegetable oil, for frying

Instructions

  1. In a bowl, combine mashed potatoes, cheddar cheese, and chives.
  2. Add flour and egg to the potato mixture and mix well.
  3. Shape the mixture into small balls.
  4. Roll the balls in breadcrumbs.
  5. Heat vegetable oil in a pan over medium-high heat.
  6. Fry the potato balls until golden brown and crispy.
  7. Drain on paper towels.
