Mediterranean Chicken Gyros

A delicious Mediterranean Chicken Gyros filled with chicken, feta, tomatoes, onions, and tzatziki sauce.

  • 1.5 lbs boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 46 pita breads
  • Tzatziki sauce
  • Sliced tomatoes
  • Sliced red onion
  • Crumbled feta cheese
  • Chopped fresh parsley

Instructions

  1. Cut chicken thighs into bite-sized pieces.
  2. In a bowl, combine olive oil, lemon juice, oregano, thyme, garlic powder, onion powder, paprika, salt, and pepper.
  3. Add chicken to the marinade and toss to coat. Let it marinate for at least 30 minutes.
  4. Cook chicken in a skillet over medium-high heat until browned and cooked through, about 5-7 minutes.
  5. Warm pita breads.
  6. Fill each pita with cooked chicken, tzatziki sauce, tomatoes, red onion, feta cheese, and parsley.

Notes

  • For extra flavor, grill the chicken instead of pan-frying.
  • Add cucumber slices for a refreshing crunch.
  • A squeeze of fresh lemon juice before serving enhances the taste.
