Mediterranean One Pot Pasta

A simple and flavorful one-pot pasta dish with Mediterranean ingredients.

Ingredients

  • 1 pound pasta
  • 4 cups vegetable broth
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup chopped Kalamata olives
  • 1/2 cup chopped sun-dried tomatoes
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup crumbled feta cheese

Instructions

  1. Combine pasta, broth, diced tomatoes, olives, sun-dried tomatoes, garlic, oregano, salt, and pepper in a large pot or Dutch oven.
  2. Bring to a boil over medium-high heat.
  3. Reduce heat to low, cover, and simmer for 10-12 minutes, or until pasta is al dente, stirring occasionally.
  4. Stir in fresh parsley and feta cheese.
  5. Serve immediately.

Notes

  • You can add other vegetables like spinach or bell peppers.
  • Adjust seasonings to your preference.
