Melt in Your Mouth Chicken

A simple and delicious ground chicken meatloaf recipe with a savory garlic Parmesan glaze.

  • 2 lbs Ground Chicken
  • 1 cup Grated Parmesan Cheese, divided
  • ½ cup Panko Breadcrumbs
  • 2 large Eggs
  • 4 cloves Garlic, minced
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • ½ teaspoon Dried Basil
  • ½ teaspoon Dried Parsley
  • ½ teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Whole Milk
  • 3 tablespoons Unsalted Butter
  • 2 cloves Garlic, minced
  • 1 tablespoon Chopped Parsley
  • 1 pinch Salt

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet or grease a loaf pan.
  2. In a large bowl, combine ground chicken, 1 cup Parmesan cheese, panko breadcrumbs, eggs, 4 minced garlic cloves, garlic powder, onion powder, basil, parsley, salt, pepper, and milk. Mix gently.
  3. Shape into a loaf or press into a loaf pan.
  4. Bake for 40-45 minutes, or until internal temperature reaches 165°F (74°C).
  5. While meatloaf bakes, melt butter in a saucepan over medium heat. Add 2 minced garlic cloves and sauté until fragrant.
  6. Stir in 1/4 cup Parmesan cheese and parsley. Cook until slightly thickened.
  7. Remove meatloaf from oven. Brush glaze over the top.
  8. Return to oven for 5-7 minutes until glaze is bubbly.
  9. Let meatloaf rest for 5 minutes before slicing. Garnish with parsley.

Notes

  • Use fresh ground chicken for best results.
  • Do not overmix the meatloaf mixture.
  • Use fresh garlic for the best flavor.
  • Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to three months.
