  • 2 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 1/4 teaspoon black pepper

Instructions

  1. Place chicken breasts in a slow cooker or large pot.
  2. In a separate bowl, whisk together chicken broth, soy sauce, honey, olive oil, garlic, ginger, and pepper.
  3. Pour the liquid mixture over the chicken.
  4. Cook on low in a slow cooker for 4-6 hours, or simmer gently on the stovetop for 30-40 minutes until the chicken is cooked through and easily shreds.
  5. Remove chicken and shred using two forks.
  6. Return shredded chicken to the liquid and stir to coat.
  7. Serve hot.

Notes

  • You can use chicken thighs instead of breasts for richer flavor.
  • If using the stovetop method, keep the heat low to prevent the chicken from drying out.
