  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, melted butter, baking soda, salt, and sugar. Stir well.
  3. Beat in the egg and vanilla extract.
  4. Stir in the flour until just combined. Do not overmix.
  5. Fold in the chopped nuts.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50 to 60 minutes, or until a wooden pick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before removing it to a wire rack to cool completely.

Notes

  • Use very ripe, spotty bananas for the best flavor and moisture.
  • You can substitute pecans for walnuts if you prefer.
  • If the top browns too quickly during baking, loosely cover it with aluminum foil for the remainder of the time.
