No Sugar Carrot Cake

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 1/2 cups grated carrots
  • 1 cup unsweetened applesauce
  • 1/2 cup vegetable oil
  • 1/2 cup mashed ripe banana
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, combine the grated carrots, applesauce, vegetable oil, mashed banana, eggs, and vanilla extract. Mix well.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in the chopped nuts, if using.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

  • For a sugar-free frosting, you can use cream cheese mixed with a sugar substitute like stevia or erythritol.
  • Ensure your carrots are finely grated for the best texture.
  • You can substitute the vegetable oil with melted coconut oil.
