Easy homemade chicken and broccoli nuggets, a healthy alternative to store-bought versions.

  • 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
  • 1 cup broccoli florets, finely chopped
  • 1/4 cup whole wheat breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper.
  2. In a food processor, pulse the chicken pieces until finely ground.
  3. Transfer the ground chicken to a bowl. Add the chopped broccoli, breadcrumbs, Parmesan cheese, beaten egg, salt, and pepper. Mix well until everything is combined.
  4. Shape the mixture into small nugget shapes.
  5. Place the nuggets on the prepared baking sheet.
  6. Bake for 15-20 minutes, or until golden brown and cooked through, flipping halfway through.

Notes
