One-Pot Chicken Alfredo (Weeknight)

Ingredients

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 3 cups low-sodium chicken broth
  • 8 ounce small pasta
  • ยผ teaspoon salt
  • ยผ teaspoon black pepper
  • 1 ยฝ cups heavy whipping cream
  • 1 ยผ cup Parmesan cheese, shredded
  • 2 cups cooked chicken
  • ยพ cup frozen peas

Instructions

  1. Melt butter in a heavy bottomed skillet over medium heat. Add garlic and cook for about 30 seconds until fragrant.
  2. Add chicken broth, pasta, salt, and pepper; stir to cover the pasta with liquid.
  3. Simmer for 8 to 10 minutes until the pasta cooks and most liquid absorbs. Adjust time based on your pasta shape.
  4. Stir in whipping cream, Parmesan, chicken, and frozen peas.
  5. Raise heat to medium-high and let the mixture bubble until it thickens, about 3 to 4 minutes.
  6. Taste the dish and add more salt and pepper if necessary.
