One-Pot Chicken Alfredo

A simple and creamy chicken alfredo made in a single pot.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 12 ounces fettuccine pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken, salt, and pepper. Cook until browned on all sides.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Pour in chicken broth and bring to a boil. Add fettuccine and stir to combine.
  4. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until pasta is al dente, stirring occasionally.
  5. Stir in heavy cream and Parmesan cheese. Cook, stirring, until sauce is thickened and heated through.
  6. Garnish with fresh parsley before serving.

Notes

  • For a richer sauce, you can add an extra splash of heavy cream.
  • Feel free to add steamed broccoli or peas for extra vegetables.
