Oven Baked Chicken Thighs

Ingredients

  • Bone-in, skin-on chicken thighs
  • Olive oil
  • Garlic powder
  • Paprika
  • Salt
  • Pepper
  • Optional herbs: Fresh rosemary
  • Optional herbs: Thyme
  • Optional herbs: Oregano

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs completely dry with paper towels.
  3. In a small bowl, combine olive oil, garlic powder, paprika, salt, and pepper. If using fresh herbs, chop them finely and add them to the oil mixture.
  4. Rub the seasoning blend all over the chicken thighs, ensuring some gets under the skin.
  5. Place the chicken thighs skin-side up on a parchment-lined baking sheet or in a greased baking dish. Space them apart for even cooking.
  6. Bake for 35-45 minutes, or until the skin is golden brown and an internal thermometer reads 165°F (75°C).
  7. Remove from the oven and let the chicken rest for 5-10 minutes before serving.

Notes

  • Marinate the chicken thighs for a few hours or overnight for enhanced flavor.
  • You can roast vegetables alongside the chicken for a complete meal.
