  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup mayonnaise
  • 1 cup Panko bread crumbs
  • 1 tablespoon Italian seasoning
  • 1 teaspoon poultry seasoning
  • 2/3 cup grated Parmesan cheese
  • 1 tablespoon minced garlic
  • 4 tablespoons unsalted butter
  • Olive oil cooking spray

Instructions

  1. Cut chicken breasts in half. Pound them to an even thickness.
  2. In a small bowl, mix Panko bread crumbs with Italian and poultry seasonings.
  3. Place mayonnaise in a resealable bag. Add chicken breasts and coat both sides.
  4. Remove chicken from the bag and dip into the Panko mixture, ensuring an even coating.
  5. Place coated chicken in a greased air fryer basket or on a tray.
  6. Spray the chicken coating generously with olive oil spray for extra crispiness.
  7. In a small bowl, mix softened butter with minced garlic.
  8. Set air fryer to 370 degrees F (188 C) and cook for 7 minutes.
  9. Flip the chicken and cook for an additional 5 minutes, or until the internal temperature reaches 165 degrees F (74 C).
  10. Top the chicken with grated Parmesan cheese.
  11. Add the garlic butter mixture over the cheese.
  12. Air fry for 2 to 3 minutes more, until the cheese is melted and the butter is warm.
  13. Serve immediately.

  • Using an olive oil spray on the Panko coating is key for achieving a truly crunchy texture.
