4 boneless, skinless chicken breasts (about 1.5–2 lbs)
1 cup freshly grated Parmesan cheese
1 cup Panko breadcrumbs (or Italian breadcrumbs)
2 large eggs
1 tsp garlic powder
½ tsp paprika
½ tsp salt
½ tsp black pepper
2 tbsp chopped fresh parsley (optional, for garnish)
Olive oil spray or 2 tbsp for pan-frying
Preheat oven to 425°F (if baking). Line a baking sheet with parchment or place a wire rack over it.
Flatten chicken to even ½-inch thickness using a meat mallet or rolling pin.
Prepare 3 breading stations:
