  • 4 boneless, skinless chicken breasts (about 1.52 lbs)

  • 1 cup freshly grated Parmesan cheese

  • 1 cup Panko breadcrumbs (or Italian breadcrumbs)

  • 2 large eggs

  • 1 tsp garlic powder

  • ½ tsp paprika

  • ½ tsp salt

  • ½ tsp black pepper

  • 2 tbsp chopped fresh parsley (optional, for garnish)

  • Olive oil spray or 2 tbsp for pan-frying

Instructions

  • Preheat oven to 425°F (if baking). Line a baking sheet with parchment or place a wire rack over it.

  • Flatten chicken to even ½-inch thickness using a meat mallet or rolling pin.

  • Prepare 3 breading stations:

    • Bowl 1: Mix Parmesan, breadcrumbs, garlic powder, paprika, salt, pepper.

    • Bowl 2: Beat eggs.

  • Dip each chicken breast into eggs, then press firmly into the Parmesan-breadcrumb mix.

  • Let coated chicken rest 10–15 minutes on a plate to help breading adhere.

  • Cooking options:

    • Pan-fry: Heat olive oil over medium-high. Cook 3–4 min per side until golden & cooked through.

    • Oven: Bake 20–22 min or until internal temp hits 165°F. Flip halfway for even browning.

    • Air Fryer: 400°F for 10–12 minutes, flipping once.

 

  • Garnish with fresh parsley and serve immediately.
