High Protein Comfort Meal

Ingredients

  • 1 lb chicken breast
  • 2 cups broccoli florets
  • 1 cup cooked quinoa
  • 2 tbsp olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. Toss broccoli florets with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet.
  3. Cut chicken breast into bite-sized pieces. Toss with remaining 1 tbsp olive oil, salt, and pepper. Add to the baking sheet with broccoli.
  4. Roast for 20-25 minutes, or until chicken is cooked through and broccoli is tender.
  5. Serve chicken and broccoli over cooked quinoa.

Notes

  • You can substitute chicken with tofu for a vegetarian option.
  • Add your favorite spices to the chicken for extra flavor.
