A quick and easy recipe for pesto chicken flatbread, perfect for a weeknight meal or appetizer.

  • 1 (12-inch) pre-made flatbread or pizza crust
  • 1/2 cup prepared pesto
  • 1 cup cooked, shredded chicken
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil (optional)
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. Place the flatbread on a baking sheet.
  3. Spread the pesto evenly over the flatbread, leaving a small border for the crust.
  4. Distribute the shredded chicken over the pesto.
  5. Sprinkle the mozzarella and Parmesan cheeses over the chicken.
  6. Bake for 10-12 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  7. Garnish with fresh basil, if desired.
  8. Slice and serve immediately.

Notes

  • You can use leftover roasted chicken or rotisserie chicken for this recipe.
  • For a spicier kick, add a pinch of red pepper flakes before baking.
  • Feel free to add other vegetables like cherry tomatoes or spinach.
