Philly Cheesesteak Mac & Cheese

  • 1 pound elbow macaroni
  • 1 pound ground beef
  • 1 large onion, sliced
  • 1 green bell pepper, sliced
  • 8 ounces sliced mushrooms
  • 4 cups shredded cheddar cheese
  • 2 cups milk
  • 1/2 cup butter
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Cook macaroni according to package directions. Drain and set aside.
  2. In a large skillet, brown the ground beef. Drain off any excess grease.
  3. Add the sliced onion, green bell pepper, and mushrooms to the skillet with the beef. Cook until vegetables are tender.
  4. In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  5. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened.
  6. Remove from heat and stir in cheddar cheese until melted and smooth. Season with salt and pepper.
  7. Add the cooked macaroni and the beef and vegetable mixture to the cheese sauce. Stir to combine.
  8. Pour into a baking dish and bake at 375°F (190°C) for 20 minutes, or until bubbly.

Notes

  • For an extra cheesy flavor, add a bit of provolone cheese to the sauce.
  • Serve immediately.
