Instructions

  1. Cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the vanilla extract.
  3. In a separate bowl, whisk together the all-purpose flour, ground pistachios, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Shape the dough into small balls, about 1 inch in diameter.
  6. Place the cookie balls on a baking sheet lined with parchment paper.
  7. Bake in a preheated oven at 325°F (160°C) for 12-15 minutes, or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, dust the cookies generously with powdered sugar.
