Protein Greek Yogurt Cookies

These cookies combine the richness of Greek yogurt with a protein boost for a satisfying treat.

  • 1 cup all-purpose flour
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup plain Greek yogurt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, protein powder, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Stir in the Greek yogurt until just incorporated. Do not overmix.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips if using.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets.
  8. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chewier cookie, use brown sugar only.
  • You can substitute almond flour for all-purpose flour for a gluten-free option.
  • Add nuts or dried fruit for extra flavor and texture.
