Chicken breasts stuffed with pumpkin puree and shredded Gouda cheese, baked until golden.

  • 2 boneless, skinless chicken breasts
  • 1/4 cup pumpkin puree
  • 1/4 cup shredded Gouda cheese
  • 1/2 teaspoon dried sage
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut a pocket into the side of each chicken breast.
  3. In a small bowl, mix the pumpkin puree, Gouda cheese, sage, salt, and pepper.
  4. Stuff the pumpkin and cheese mixture into the pockets of the chicken breasts.
  5. Heat olive oil in an oven-safe skillet over medium-high heat.
  6. Sear the chicken breasts for 2-3 minutes per side until browned.
  7. Transfer the skillet to the preheated oven.
  8. Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted.
  9. Let the chicken rest for 5 minutes before serving.

Notes

  • Ensure the chicken is cooked to an internal temperature of 165°F (74°C).
  • You can add a pinch of nutmeg to the filling for extra flavor.
