Quick & Easy Homemade Butter Chicken

A simple and delicious recipe for homemade butter chicken, perfect for a weeknight dinner.

  • 500g boneless, skinless chicken thighs or breasts, cut into chunks
  • 2 tablespoons yogurt
  • 2 garlic cloves, minced
  • ยฝ-inch piece of ginger, grated
  • Salt to taste
  • 1 teaspoon chili powder
  • 3 tablespoons butter
  • 1 cup tomato puree
  • ยฝ cup heavy cream or coconut cream
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
  • 1 teaspoon coriander powder
  • Fresh cilantro for garnish

Instructions

  1. Combine chicken chunks with yogurt, half of the minced garlic, half of the grated ginger, salt, and chili powder. Marinate for at least 30 minutes.
  2. Heat 2 tablespoons of butter in a large skillet over medium heat. Sautรฉ remaining garlic and ginger until fragrant. Add garam masala, turmeric powder, cumin powder, chili powder, and coriander powder. Cook for 1 minute.
  3. Pour in tomato puree and stir. Simmer for 10 minutes, stirring occasionally.
  4. Melt 1 tablespoon of butter in a separate pan over medium heat. Add marinated chicken and cook until golden brown and cooked through, about 8-10 minutes.
  5. Transfer cooked chicken to the skillet with the tomato sauce. Stir to combine. Pour in heavy cream or coconut cream. Simmer for 10 minutes on low heat.
  6. Adjust salt as needed. Garnish with cilantro and serve hot.

  • Use coconut cream and plant-based butter for a dairy-free option.
  • Adjust chili powder for desired spice level.
  • Longer marination (up to overnight) yields more flavorful chicken.
  • Boneless thighs result in juicier chicken; breasts are leaner.
