Ranch-Crusted Chicken Bites

  • 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
  • 1/2 cup buttermilk
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons ranch seasoning mix
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper.
  2. Place the chicken pieces in a bowl and pour the buttermilk over them. Let sit for 10 minutes.
  3. In a shallow dish, combine the panko breadcrumbs, Parmesan cheese, ranch seasoning mix, garlic powder, and black pepper.
  4. Remove chicken from buttermilk, letting excess drip off, and dredge each piece in the breadcrumb mixture, pressing to coat.
  5. Arrange the coated chicken pieces on the prepared baking sheet.
  6. Drizzle the olive oil over the chicken bites.
  7. Bake for 15-20 minutes, or until the chicken is cooked through and golden brown.

Notes

  • Serve with your favorite dipping sauce.
  • For extra crispiness, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
