Ricotta Stuffed Peppers

Bell peppers filled with a creamy ricotta mixture and baked until tender.

Ingredients

  • 4 large bell peppers
  • 15 oz ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs
  • 1/4 cup marinara sauce

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a bowl, combine ricotta cheese, Parmesan cheese, parsley, egg, salt, and pepper.
  4. Stuff the peppers with the ricotta mixture.
  5. Top each pepper with breadcrumbs and a tablespoon of marinara sauce.
  6. Place the stuffed peppers in a baking dish.
  7. Bake for 30-40 minutes, or until the peppers are tender and the topping is golden brown.

Notes

  • You can add cooked ground meat or vegetables to the ricotta mixture for a heartier dish.
  • Serve with extra marinara sauce if desired.
