Roasted Potatoes with Baked Feta

A simple recipe for crispy roasted potatoes with creamy baked feta.

Ingredients

  • 2 lbs potatoes, cut into 1-inch cubes
  • 1 block (7 oz) feta cheese
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. In a large bowl, toss the potato cubes with olive oil, oregano, garlic powder, salt, and pepper.
  3. Spread the seasoned potatoes in a single layer on a baking sheet.
  4. Place the block of feta cheese in the center of the baking sheet among the potatoes.
  5. Roast for 30-40 minutes, or until the potatoes are tender and golden brown, and the feta is soft and slightly browned.
  6. Remove from the oven. Mash the feta into the potatoes with a fork or spoon.
  7. Serve hot.

Notes

  • You can add other seasonings like paprika or rosemary if you like.
  • For extra crispy potatoes, ensure they are in a single layer on the baking sheet and do not overcrowd the pan.
